日式火鍋壽喜燒
壽喜燒Sukiyaki是日本傳統家人團聚時,在餐桌上使用圓形厚底鍋淺的鐵鑄鍋邊煮邊吃的甜火鍋料理。因為象徵幸福與家庭和樂,是日本最具代表的家鄉料理,目前在全世界已蔚為風潮。
 
壽喜燒的主要素材為牛肉(或豬肉)、牛油、洋蔥、日本大蔥、牛蒡、白菜、豆腐、蒟蒻絲等,而最重要的靈魂調味料則為「壽喜燒醬」。早期日本因地域差異,壽喜燒分為「關東」和「關西」兩種不同風味的作法。關西重濃厚口味,先將牛肉用壽喜燒醬炒熟,再放入所有素材及壽喜燒醬烹煮。而關東是先以牛油熱鍋,炒香洋蔥、牛蒡、日本大蔥後,加入適量壽喜燒醬,再放入牛肉、大白菜、豆腐、蒟蒻絲一同燒煮至熟,因整鍋盡是蔬菜及肉的原汁,香濃鮮甜,食用時只需沾生蛋汁,除有降溫效果外,更可以使肉質滑嫩順口。

原料:釀造醬油、米霖、糖、水、鹽、釀造米酢、柴魚、昆布、釀造酒精、酵母抽出物、玉米糖膠(黏稠劑)
