下營區農會黑豆腐乳,以在地契作收購的本省黑豆為原料,經浸泡數小時後,研磨成豆漿。再將豆漿加入凝固劑後攪拌倒入板模型中,壓榨成型,製成豆腐。然後把切成小塊的豆腐醃漬2天後,加入黑豆與米的麴菌及醬汁,入罐經23個月發酵,即成黑豆腐乳。

成份:黑豆、水、砂糖、鹽、檸檬酸、硫酸鈣、食用酒精、辣椒、品質改良劑-豆腐用銷泡劑(完全氫化棕櫚油脂、卵磷脂、 脂肪酸山梨醇酐脂、二氧化矽)
